Happy Anniversary: The Best is Yet to Come

I can't believe it's already been a year since I married the love of my life!
Man, time sure flies...fast!

At the end of our wedding day I remember saying to my husband,
that it had been the best day of my life.
It truly had, and he agreed! 








I can't say the last year has been easy,
but having him by my side has made life easier.
May 21, 2011 was the best day of my life,
but it just keeps getting better!

I love you MORE than I ever thought possible Travis Wesley Agustin!!!

Date night: Cinco de Mayo


Our cinco de mayo celebrations were low key,
but we enjoyed every bit of them! 

We took the pups to the beach to watch the sun set,
muy romantico ;-) 



 Then celebrated with yummy food and tasty drinks! 



And the celebration continued with more margaritas and shots when we got home!

 
It was a pleasant evening spent with great company!

Thirsty Thursday

We had roomie taco night last night which was such a hit that we hardly had anything left over!
The food was so yummy (my mouth is watering just thinking about it),
 but the real highlight of the night was the beverages...
homemade margaronas!!!
If you've never heard of them, you've got to get on board.

 This tasty drink combines the sweet and salty flavors of a margarita
with the crisp refreshing taste of a corona.
What's not to like?  

You can make these at home following the simple recipe below,
or you can order them out at a restaurant.
I had my first margarona at On the Border,
and they also serve them at Chili’s.

After searching the internet Pinterest, here's what we threw together:

Homemade Margaronas:

Ingredients
2 cans frozen limeade (thawed)
2 cans water (using limeade can)
2 cans diet 7-up
1/2 can tequila (using limeade can)
mini coronas
ice (optional)
lime (optional)
salt (optional)

Directions
Mix all ingredients except coronas in a pitcher, salt the rim of your glasses (optional), pour mixture in glasses leaving about 1/3 empty, place corona in glass upside-down. Drink and enjoy ;-)

International Grilled Cheese Day

I'm not sure if you're aware, but last Thursday was International Grilled Cheese Day!!!
I've talked about my love for cheese before,
so you can imagine my excitement when my husband told me what day it was!

In true fat kid fashion we didn't settle for your ordinary grilled cheese,
and we couldn't make just one kind either.

We started with the best grilled cheese, (yep that's the title of the recipe).
I don't know that it's the best I've had but it was REALLY good!
Then we did a couple variations of your typical grilled cheese,
one with cheddar and spicy pickles,
and the other with cheddar, spicy pickles, and salami.

To keep with the cheese theme,
we also made homemade mac n cheese.

Our cheese fest was amazing,
can't wait for the next one!

***Our tweaks***

For the Grilled cheese:
We used grated cheese on all our sandwiches (it gets gooey-er!)
Once the bread was buttered we poked holes through each slice so the cheese could ooze out
We sprinkled grated parmesan cheese on the outside of the bread as it was grilling

For the mac n cheese:
We omitted the eggs
Used non-fat milk instead of whole
Once the noodles we cooked/drained we mixed everything together in the pot, transferred to a baking dish and baked for 25 minutes @ 350
After ten minutes of baking we added panko break crumb topping (next time I'll put the panko on at the beginning)

Peanut Butter Chocolate Chip Cookies

My new favorite cookie!

We all have our go-to cookie recipes,
the ones we use when we're in a pinch, or when we want to guarantee tasty results.
This recipe meets both those criteria and has jumped to the top of my baking list!

With only six ingredients, you can whip these treats up in no time!
I did last night...
and they're almost gone already!
They are so good; it's hard not to eat them all in one sitting!
I literally had to leave the room.

Ingredients:
1 cup crunchy peanut butter
1/2 cup sugar
1/4 cup brown sugar
1/2 teaspoon baking soda
1 egg
1 cup chocolate chips

Directions:
Heat oven to 350, mix all ingredients, roll in balls, place on cookie sheet, and bake 8-10 minutes.

Happy Easter!

Today wrapped up what was already a fun weekend!
We spent quality time with our families and friends...
and of course food was at the center of it all!


Jack let Lilah borrow his bunny ears from last year,
but they didn't last long before he snatched them off her head.


And this was only one spread from the day! 


Hard not to smile when you see these :)



They had the right idea,
some down time was definitely in order after a fun filled weekend!
